Sweet Potato Apple Soup

I have had a lot of requests for my sweet potato apple soup recipe! I have been meaning to post the recipe for a while, but its been a hectic week!

This recipe is sooo easy! Its a great way to sneak in some extra fruits & veggies and a fun way for baby to practice his or her spoon skills! Lillian loves using her spoon, but hasn't quite mastered her "scooping" skills. She likes when I preload her spoon, but prefers using her hands! I must say, this soup is delicious- but be prepared, its very very messy!

I also made homemade dinner rolls to have with the soup, which were a big hit with Lillian! This recipe can be found in the BLW cookbook by Gill Rapley & Tracey Murkett.

  • 3 medium/large sweet potatoes, peeled & cut into chunks
  • 3 large apples, peeled, cored & cut into chunks (you can use any kind, but I use Granny Smith or Mac because they are tart)
  • 1 medium onion, chopped
  • 3 garlic cloves, halved
  • 1 tbsp butter, melted
  • 1 tbsp olive oil
  • 2 tsp cumin
  • 3/4 tsp cinnamon
  • 1 tsp paprika
  • low sodium vegetable broth (approx 3 cups, more or less depending how thick of a consistency you want the soup to be)

1. Preheat oven to 400F
2. Place sweet potato, apples, onion and garlic in a shallow roasting pan & drizzle with melted butter and olive oil. Sprinkle with spices and toss to coat.
3. Roast uncovered for 30-40 minutes or until sweet potato and apples are tender, then allow them to cool
4. In a blender add half of the sweet potato mixture and half of the vegetable broth and blend until the soup is smooth and there are no chunks. Add extra broth if you would like the soup to be a thinner consistency.
