Broccoli Cheddar Quiche

This is one of our favourite recipes! It can be served for breakfast, lunch OR dinner!

1 1/4 cups all-purpose flour
1/2 tsp sugar
1/2 tsp salt
1/2 cup unsalted butter
3 tbsp cold water

1. Mix flour, sugar & salt together 
2. In a food processor pulse dry ingredients with butter until the mixture resembles course crumbs 
3. Sprinkle with water and pulse until dough is crumbly but holds together when squeezed
4. Press dough into a thick disk and cover with plastic wrap. Refrigerate for at least one hour (or up to 2 days)
5. On a floured surface, roll dough into a 14-inch circle and place in a greased 9 inch pie plate

1 tbsp unsalted butter
1 large yellow onion, diced
3/4 cup of broccoli florets, steamed until tender
6 large eggs
3/4 cup of almond milk (or any milk)
1 cup grated cheddar cheese

1. Preheat oven to 375 and bake pie crust until it is light & golden (approx 15-20 minutes)
2. Meanwhile, in a skillet, melt butter and add onion, cooking for 8-10 minutes
3. In a medium bowl, whisk together eggs & cream. Add onion, steamed broccoli & cheese
4. Whisk to combine & pour into cooked pie crust. Bake for 40-45 minutes or until the centre of the quiche is set

We served the quiche with breakfast sausages, tomato slices & fresh fruit. You could also serve it with a side of garden salad or steamed veggies!
